Kill Bill:

Tarantino claimed it was always supposed to be one movie which it is in the WBA. It was originally one long movie.

I have not watched the new version but I've read that less is revealed about the ending and the daughter in the WBA until the end which many feel is much better, and there are technical difference in some of the fight scenes with (color vs B&W, richer colors in the WBA, hard coded captions in WBA, some new scenes and some removed scenes). New animation at intermission.

Look on YouTube - lots of discussion.

A whole bunch (more) of Extras.

To be clear, the movie file itself is identical between the two versions. The original disc was HDR10 with the Collector's Edition being Dolby Vision, allowing a specific difference on the film itself. However, the digital versions have always been DV. For the first Avatar, there is at least the inclusion of alternate cuts (HD only unfortunately) to further distinguish the offerings. For the sequel, it's literally just 3 (?) hours of Extras vs. 8 (?) hours of Extras. :)

Oh, the same thing is expected of Fire & Ash with a Collector's Edition due closer to the holidays. Rumors of an extended version abound, but Cameron is always spouting off about all his plans so we'll see.
