I just discovered a user can edit movie info via a web browser for each movie. One of the features is that you can upload different cover art. I've had a few Bluray movies (where the recycle the same disc I'm sure) show up with different cover art. Seems this could be a way to change that (if I get around to it).

Does anyone know where I can find the HD and UHD cover art file requirements (dimensions, max size, format, etc)?

I believe the recommended size .jpg for the Premier system is 1080x756 resolution, under 250K. Stratos will display 4K images as 1080p cover art images.
